SHAWNEE -- If you’ve been into the Shawnee brewery lately, you might have noticed some changes to our tap list. We’re evolving — bringing more balance to our lineup with a new mix of core beers you can count on, alongside the playful, one-of-a-kind creations you’ve always known us for. Since launching our 10-barrel brewhouse in Atchison earlier this year, we’ve been laser-focused on dialing in consistency and elevating quality across the board, and that starts with building out a lineup of core beers that truly represent who we are.
The craft beer world looks a lot different than it did when we opened more than six years ago. A lot of breweries are struggling right now, and sadly we’ve seen too many doors close. From day one, we created a hop logo with a fluid, wavy look because we knew adaptability would be key to longevity. We’re not just here to scrape by — we’re building for the future. That means brewing styles of beers like lagers and IPAs that people love to come back for, while still creating the playful, one-of-a-kind beers that keep things exciting.
When we opened in 2019, we brewed on a 3-barrel system and had 10 taps. Rotation was the only way we could provide variety. In March 2021, we added 10 more taps. When we opened The Mosaic Room in April 2023, we expanded to 32 taps. That growth, along with a much larger brewhouse in Atchison, has given us the ability to not only keep some beers on tap consistently but also continue rotating through experimental, small-batch favorites. It really is the best of both worlds!
If you’ve visited us in the past and didn’t find the beer style you were looking for, come back and see what we're up to. A lot of folks know us for sours — and Courtney’s still crushing those — but her lagers and IPAs have leveled up in a big way on our new system. There’s truly something for every palate now.
Over the next couple of weeks, we’ll be introducing you to our new core beer lineup as well as debunk a few myths we hear from time to time. We're also working on a special event that will showcase these beers alongside throwbacks you might remember from the past. Stay tuned for details!
This is who we've always been — just evolved. And we can’t wait to pour you what’s next.
